Mint Syrup Preparation

    Prepare the Mint Syrup

    In a medium saucepan, combine the fresh mint leaves and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for 10 minutes.

    Add Sugar

    Remove from heat and stir in the granulated sugar until fully dissolved. Let the syrup cool completely, then strain out the mint leaves.

    Store Syrup

    Transfer the mint syrup to a clean bottle or jar. It can be stored in the refrigerator for up to 2 weeks.

Cocktail Assembly

    Combine Ingredients

    In a tall glass, add the shag bark shrub (or apple cider vinegar) and the sliced cucumber.

    Add Mint Syrup

    Pour in 2 tablespoons of the prepared mint syrup over the cucumber and shrub mixture.

    Finish with Soda

    Top off the glass with 2 cups of soda water and stir gently to combine.

    Garnish and Serve

    Garnish with additional mint leaves or cucumber slices if desired. Serve immediately over ice.
