Method

Pavlova Base Preparation

    Preheat the Oven

    Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

    Whip Egg Whites

    In a clean mixing bowl, whisk the egg whites on medium speed until soft peaks form.

    Add Sugar

    Gradually add the granulated sugar, one tablespoon at a time, whisking on high speed until the mixture is glossy and forms stiff peaks.

    Mix Dry Ingredients

    In a separate bowl, mix together the cornstarch and vinegar. Add this mixture to the egg whites along with the vanilla extract and gently fold to combine.

    Shape Pavlova

    Spoon the mixture onto the prepared baking sheet, forming a circular shape about 9 inches in diameter with a slight well in the center.

    Bake

    Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlova cool completely inside the oven.

Sweet Potato Filling Preparation

    Cook Sweet Potatoes

    Peel and chop the sweet potatoes. Boil in a pot of water until tender, about 15-20 minutes. Drain and let cool.

    Mash Sweet Potatoes

    In a bowl, mash the cooked sweet potatoes with maple syrup and ground cinnamon until smooth.

Date & Tamarind Caramel Preparation

    Blend Caramel Ingredients

    In a blender, combine the pitted dates, tamarind paste, and water. Blend until smooth and creamy, adding more water if necessary to achieve a pourable consistency.

Coconut Sorbet Preparation

    Combine Sorbet Ingredients

    In a mixing bowl, whisk together the coconut milk, sugar, and lime juice until the sugar is dissolved.

    Freeze Sorbet

    Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, or pour into a dish and freeze, stirring every 30 minutes until set.

Oat Brittle Preparation

    Prepare Oat Brittle

    In a saucepan, melt the butter over medium heat. Stir in brown sugar until dissolved. Add rolled oats and mix until well combined.

    Bake Oat Brittle

    Spread the mixture onto a baking sheet lined with parchment paper and bake at 350°F (175°C) for 10-15 minutes, until golden brown. Let cool and break into pieces.
