Fried Green Tomatoes

Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Dredging Stations
In one shallow bowl, place the all-purpose flour. In a second shallow bowl, pour the buttermilk. In a third shallow bowl, mix the cornmeal, cayenne pepper, black pepper, and salt.

Dredge the Tomatoes
Pat the sliced tomatoes dry with a paper towel. Dredge each slice first in the flour, then dip in buttermilk, and finally coat in the cornmeal mixture.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat until it shimmers. Fry the battered tomato slices in batches, about 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.
Mimolette Pimento Cheese

Mix the Ingredients
In a medium bowl, combine the shredded Mimolette cheese, softened cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Blend Until Smooth
Use a fork or a hand mixer to blend the ingredients together until smooth and creamy. Adjust seasoning to taste.
Green Powder (Optional Garnish)

Prepare the Green Powder
In a small bowl, mix together dried parsley and dried dill. If desired, add a few drops of green food coloring to achieve the desired color.
