Method

For the Chocolate Lava Cake

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter. Place them on a baking sheet.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the unsweetened chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly until fully combined.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture and gently fold until just combined. Do not over mix.

  6. 6

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  8. 8

    Cool Slightly

Remove from oven and let the cakes cool in the ramekins for 1 minute. Then, carefully invert each ramekin onto a plate.

For Serving

  1. 9

    Serve with Ice Cream

Serve the warm lava cakes immediately with a scoop of vanilla ice cream on top. Dust with powdered sugar for an extra touch.
