Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 450°F).

Grilling the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 6-8 minutes on one side. Carefully flip the fillets and grill for another 4-6 minutes until the salmon flakes easily with a fork and is opaque throughout.

Preparation of Vegetable Side

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and cut the asparagus, bell pepper, and zucchini into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the prepared vegetables, sprinkle with salt and black pepper, and sauté for about 5-7 minutes until they are tender but still crisp.

Serving

  1. 6

    Plate the Dish

Once the salmon is done grilling and the vegetables are sautéed, serve the salmon fillets alongside the sautéed vegetables on a plate. Optionally, garnish with lemon wedges and fresh herbs.
