Preparation of Salmon

Marinate the Salmon
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Preheat your grill to medium-high heat (about 375°F to 450°F).

Prepare the Vegetables
While the salmon is marinating, wash and cut the asparagus, bell pepper, and zucchini into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the prepared vegetables, sprinkle with salt and black pepper, and sauté for about 5-7 minutes until they are tender but still crisp.

Plate the Dish
Once the salmon is done grilling and the vegetables are sautéed, serve the salmon fillets alongside the sautéed vegetables on a plate. Optionally, garnish with lemon wedges and fresh herbs.
