    Prepare the Chicken (or Eggplant or Veal)

    If using eggplant, slice it into 1/2 inch rounds and sprinkle with salt. Let it sit for 30 minutes to draw out moisture, then rinse and pat dry.

    Bread the Meat/Vegetable

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Season the flour with salt and pepper. Dredge each piece in flour, dip in eggs, then coat with breadcrumbs.

    Fry the Breaded Pieces

    In a large skillet, heat olive oil over medium heat. Fry each piece until golden brown on both sides, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

    Assemble the Parmigiana

    Preheat your oven to 375°F (190°C). In a baking dish, layer the fried pieces. Top each with a generous amount of homemade tomato sauce and shredded mozzarella cheese.

    Bake

    Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly. If desired, garnish with fresh basil before serving.
