Prepare the Marinara Sauce

In a saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in crushed tomatoes, oregano, sugar, salt, and pepper. Simmer for about 15-20 minutes, then stir in chopped fresh basil.

Bread the Mozzarella

Slice the fresh mozzarella into 1/2 inch thick slices. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with salt and pepper.

Fry the Mozzarella

Dip each mozzarella slice in flour, then in egg, and finally coat with breadcrumbs. In a large skillet, heat olive oil over medium-high heat. Fry the breaded mozzarella slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.

Serve

Place fried mozzarella slices over a bed of warm marinara sauce. Garnish with fresh basil and serve immediately.
