Pasta and Filling
Method
Preparation Steps
- 1
Make the Pasta Dough
In a large bowl, mix the flour and salt together. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
- 2
Prepare the Filling
In a mixing bowl, combine ricotta cheese, grated Parmesan cheese, chopped basil, salt, and black pepper. Mix until well combined.
- 3
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out one piece into a thin sheet, about 1/16 inch thick. Keep the rest of the dough covered to prevent drying out.
- 4
Form the Raviolis
Cut the rolled dough into 2-inch squares. Place a teaspoon of filling in the center of each square. Brush the edges with water, fold over to create a triangle, and press to seal. Ensure there are no air pockets.
- 5
Cook the Raviolis
Bring a large pot of salted water to a boil. Add the raviolis in batches and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
- 6
Serve
Serve the raviolis hot with your favorite marinara sauce or a drizzle of olive oil and a sprinkle of fresh basil.
