Prepare the Pork Cheeks

Season the pork cheeks with salt and allspice. Heat vegetable oil in a large pot over medium-high heat. Sear the pork cheeks until browned on all sides, about 8-10 minutes. Remove from pot and set aside.

Make the Braising Liquid

In the same pot, add minced garlic, ginger, and dried chili flakes. Sauté for 2-3 minutes until fragrant. Stir in soy sauce, brown sugar, and water, scraping any browned bits from the bottom of the pot.

Braise the Pork

Return the pork cheeks to the pot. Bring to a simmer, cover, and reduce heat to low. Allow to braise for 2-3 hours until the pork is tender.

Cook the Potatoes

While the pork is braising, boil the marble potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

Prepare the Scallion Pancakes

While the pork and potatoes are cooking, prepare the scallion pancakes according to package instructions or make them from scratch.

Serve

Once the pork is tender, serve it alongside the marble potatoes and scallion pancakes. Drizzle with the braising liquid.
