Make the Roux

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Gradually add the flour, whisking constantly until the mixture turns a dark brown color, resembling chocolate. This should take about 20-30 minutes.

Cook the Vegetables

Once the roux is ready, add the chopped onion, green bell pepper, and celery to the pot. Cook, stirring frequently, until the vegetables are softened, about 5-7 minutes.

Add Garlic and Chicken

Stir in the minced garlic and chicken pieces. Cook until the chicken is browned on all sides, about 5-10 minutes.

Add Liquid and Seasonings

Pour in the chicken broth, and add bay leaves, thyme, Cajun seasoning, salt, and black pepper. Bring to a boil.

Simmer the Gumbo

Reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.

Add Sausage and Seafood

Add the sliced Zummo’s sausage, shrimp, and blue crab to the pot. Cook for an additional 10-15 minutes until the shrimp are pink and the crab is heated through.

Finish with File

Stir in the file powder just before serving. Adjust seasoning with salt and black pepper if needed.
