    Marinate the Chicken

    In a large bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper. Mix well and add the chicken thighs, ensuring they are well coated. Cover and marinate for at least 30 minutes, preferably in the refrigerator.

    Cook the Chicken

    In a large skillet over medium heat, add a bit of olive oil and cook the marinated chicken thighs skin-side down for about 7-8 minutes until the skin is crispy. Flip the chicken and cook for another 7-8 minutes until cooked through. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add chopped onion and bell pepper. Sauté for 5 minutes until softened. Then add diced tomatoes and cook for an additional 3-4 minutes until the tomatoes start to break down.

    Combine and Serve

    Return the chicken to the skillet, nestling it among the vegetables. Sprinkle chopped cilantro on top and cook for an additional 2-3 minutes to heat through. Serve immediately.

    In a medium saucepan, bring chicken broth to a boil. Add the rice, cover, and reduce the heat to low. Cook for 15-20 minutes until the rice is tender and the liquid is absorbed.

    Rinse and drain the canned black beans. In a small saucepan, heat the beans over medium heat until warmed through. Season with salt and pepper to taste.
