Preparation

  1. 1

    Marinate the Chicken

In a bowl, mix olive oil, minced garlic, fresh rosemary, lemon juice, salt, and pepper. Add chicken breast pieces and coat evenly. Marinate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

Wash the asparagus and cherry tomatoes. Trim the ends of the asparagus and set both aside.

Cooking

  1. 3

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes on each side until cooked through and internal temperature reaches 75°C (165°F).

  2. 4

    Roast the Vegetables

In a large baking dish, add the asparagus and cherry tomatoes. Drizzle with balsamic vinegar and a pinch of salt and pepper. Roast in the oven at 200°C (400°F) for 15-20 minutes or until tender.

Serving

  1. 5

    Plate the Dish

Once the chicken is cooked and the vegetables are roasted, place a chicken breast on each plate. Add a portion of roasted asparagus and tomatoes. Grate Parmesan cheese over the dish and sprinkle with fresh basil for garnish.
