Marinade Preparation
Make the Marinade
In a medium bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, black pepper, and chopped cilantro until well combined.
Marinate the Protein
Place the chicken breasts and shrimp in a large resealable plastic bag or shallow dish. Pour the marinade over the protein, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight.
Grilling
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 450°F).
Grill the Protein
Remove the protein from the marinade and discard the marinade. Grill the chicken breasts for about 6-8 minutes per side, or until fully cooked (internal temperature of 165°F). Grill the shrimp for 2-3 minutes per side until they turn pink and opaque.
Serving
Prepare the Sides
Warm the corn tortillas on the grill for 1-2 minutes on each side until they are pliable.
Assemble the Dish
Serve the grilled chicken and shrimp alongside the grilled vegetables. Accompany with warm corn tortillas, sliced avocado, and lime wedges for squeezing over the top.
