Marinade Preparation

In a medium bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, black pepper, and chopped cilantro until well combined.

Marinate the Protein

Place the chicken breasts and shrimp in a large resealable plastic bag or shallow dish. Pour the marinade over the protein, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight.

Preheat your grill to medium-high heat (about 375°F to 450°F).

Remove the protein from the marinade and discard the marinade. Grill the chicken breasts for about 6-8 minutes per side, or until fully cooked (internal temperature of 165°F). Grill the shrimp for 2-3 minutes per side until they turn pink and opaque.

While the protein is grilling, place the sliced bell peppers, red onion, and zucchini on the grill. Cook for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
