Mix the Filling
In a large mixing bowl, combine the cream cheese, granulated sugar, vanilla extract, sour cream, and eggs. Use an electric mixer to beat the mixture until smooth and creamy, ensuring there are no lumps.

Assemble the Cheesecake
Place a large flour tortilla on a clean surface. Spoon about 1/4 cup of the cheesecake filling onto the center of the tortilla. Fold the sides over the filling, then roll up the tortilla tightly to enclose the filling. Repeat with all tortillas.

Heat Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cheesecakes
Carefully place the filled tortillas into the hot oil, a few at a time, without overcrowding. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.

While the cheesecakes are still warm, roll them in a mixture of granulated sugar and cinnamon until well coated.
