Prepare the Vegetables
Chop the onion and bell pepper into small pieces. Set aside.

Cook the Hashbrowns
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the hashbrowns and cook until golden brown and crispy, about 5-7 minutes. Stir occasionally. Once cooked, remove from skillet and set aside.
Cooking the Eggs

Scramble the Eggs
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and bell pepper. Sauté for 3-4 minutes until the onions are translucent and the peppers are tender.

Add Sausage
Add the crumbled sausage to the skillet. Stir and cook for an additional 2-3 minutes until heated through.

Combine and Serve
Layer the crispy hashbrowns on a plate. Spoon the scrambled egg mixture on top. Sprinkle with shredded cheddar jack cheese. Serve with salsa and a dollop of sour cream on the side.
