Preparing the Egg Mixture

    Chop Vegetables

    Finely chop the onion and green bell pepper.

    Scramble Eggs

    In a bowl, crack the eggs and whisk them together until combined. Add the chopped onion, green bell pepper, and cooked sausage. Mix well.

Cooking Hashbrowns

    Heat Oil

    In a large skillet, heat the olive oil over medium-high heat.

    Cook Hashbrowns

    Add the hashbrowns to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they are golden brown and crispy.

Cooking Egg Mixture

    Cook Eggs

    Reduce the heat to medium. Pour the egg mixture into the skillet with the hashbrowns. Cook, stirring gently, until the eggs are fully cooked (about 3-5 minutes).

    Add Cheese

    Sprinkle the shredded cheddar jack cheese over the top of the eggs and hashbrowns. Cover the skillet and let it sit for 1-2 minutes until the cheese melts.
