Fried Shrimp

    Prepare the Shrimp

    In a large bowl, combine flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together eggs and milk.

    Coat the Shrimp

    Dip each shrimp in the egg mixture, then dredge in the flour mixture until fully coated.

    Fry the Shrimp

    In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Cole Slaw

    Mix the Vegetables

    In a large bowl, combine shredded cabbage and carrots.

    Prepare the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

    Pour the dressing over the cabbage and carrots. Toss well to combine. Refrigerate for at least 30 minutes before serving.

Chipotle Mayo

    In a small bowl, mix together mayonnaise, minced chipotle peppers, and lime juice until well blended.

Sandwich Assembly

    Assemble the Sandwiches

    Slice hoagie buns in half. Spread a generous amount of chipotle mayo on each side of the bun. Layer with fried shrimp, cole slaw, and a slice of American cheese.
