Fish Preparation

Prepare the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer or sparkling water until the batter is smooth and free of lumps.

Heat the Oil
In a deep skillet or frying pan, pour in the vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each cod fillet into the batter, ensuring it is evenly coated.

Fry the Fish
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove the fish and place on a paper towel-lined plate to drain excess oil.

Prepare the Rolls
While the fish is frying, slice the kaiser rolls in half, and prepare the lettuce leaves.

Assemble the Sandwich
Place a lettuce leaf on the bottom half of each kaiser roll. Add a crispy cod fillet on top of the lettuce. If desired, add a slice of cheese on top of the fish. Top with the other half of the kaiser roll.
