Season the Cod
Pat the cod filets dry with paper towels. Season both sides of each filet with salt and black pepper, ensuring even coverage.

Mix the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, and 0.5 tsp of salt until well combined.

Add the Wet Ingredient
Slowly pour in the beer (or sparkling water) while whisking the mixture to form a smooth batter. Ensure there are no lumps.
Frying the Fish

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.

Coat the Fish
Dip each seasoned cod filet into the batter, ensuring it is well coated on all sides.

Fry the Fish
Carefully place the battered cod filets into the hot oil, frying them in batches to avoid overcrowding. Fry for 4-5 minutes or until the exterior is golden brown and crispy.

Once cooked, remove the fish from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot.
