Prepare the Ingredients

    Slice the Steak

    Trim any excess fat from the ribeye steak and slice it into thin strips against the grain.

    Chop the Vegetables

    Thinly slice the onion and bell pepper. Clean and slice the mushrooms.

Cook the Filling

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Season with salt and black pepper.

    Cook the Steak

    Push the vegetables to the side of the skillet and add the remaining olive oil. Increase the heat to medium-high and add the sliced steak. Cook for 4-5 minutes, stirring frequently, until the steak is browned and cooked through.

Assemble the Sandwich

    Prepare the Hoagie Rolls

    Slice the hoagie rolls lengthwise, being careful not to cut all the way through.

    Fill the Rolls

    Divide the steak and vegetable mixture evenly between the two hoagie rolls. Top with Swiss cheese slices.

    Melt the Cheese

    Place the filled hoagie rolls under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Prepare the Au Jus

    Heat the Beef Broth

    In a small saucepan, heat the beef broth over medium heat until warmed through. This will be served alongside the sandwiches for dipping.
