Cook the Hashbrowns
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the frozen hashbrowns and cook for about 5-7 minutes, stirring occasionally until they are golden brown and crispy. Season with salt and pepper to taste.

In a bowl, whisk the eggs with salt and black pepper. In a separate skillet, sauté the chopped onion, bell pepper, and mushrooms over medium heat until they are soft, about 3-4 minutes. Add the whisked eggs to the pan and cook, stirring gently, until the eggs are fully cooked but still fluffy, about 2-3 minutes.

Assemble the Dish
On a plate, create a bed of the crispy hashbrowns. Spoon the scrambled egg mixture over the hashbrowns. Sprinkle the cheddar jack cheese on top of the eggs, allowing it to melt slightly from the heat.
