Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and melted butter. Stir until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shaping & Baking

  1. 5

    Preheat Oven

Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

  2. 6

    Shape the Pretzel

Punch down the risen dough and transfer it to a floured surface. Roll the dough into a long rope (about 24 inches) and shape it into a pretzel.

  3. 7

    Prepare Baking Soda Solution

In a large pot, bring 10 cups of water and 0.5 cups of baking soda to a boil.

  4. 8

    Boil the Pretzel

Carefully place the shaped pretzel into the boiling baking soda solution for about 30 seconds. Remove and place on the prepared baking sheet.

  5. 9

    Sprinkle Toppings

Sprinkle the boiled pretzel with coarse sea salt.

  6. 10

    Bake

Bake in the preheated oven for about 12-15 minutes, or until golden brown.

Cheese Sauce Preparation

  1. 11

    Melt Butter

In a medium saucepan, melt the butter over medium heat.

  2. 12

    Make Roux

Add the flour to the melted butter and whisk continuously for about 2 minutes to create a roux.

  3. 13

    Add Milk

Slowly add the milk while whisking to prevent lumps. Continue whisking until the mixture thickens.

  4. 14

    Add Cheese

Stir in the shredded cheddar cheese and season with salt and black pepper. Cook until the cheese is melted and smooth.
