Prepare the Cheese
Cut the cheddar cheese into small cubes, approximately 1 inch in size. Set aside.
- 3
Make the Batter
In a large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. In a separate bowl, whisk together the eggs and milk until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be thick but pourable.
Frying
- 4
Heat the Oil
In a deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.
- 5
Coat and Fry
Dip each cheddar cheese cube into the batter, ensuring it is fully coated. Then, add a piece of chopped bacon into the batter and coat it as well. Carefully drop the battered cheese and bacon into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.

Drain and Serve
Using a slotted spoon, remove the fried nuggets from the oil and place them on a plate lined with paper towels to absorb excess oil. Allow to cool slightly before serving.
