Corned Beef Hash

    Prepare the Ingredients

    Dice the cooked corned beef, potatoes, onion, and bell pepper. Mince the garlic.

    Cook the Hash

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook until they start to soften, about 5-7 minutes.

    Add Vegetables and Meat

    Stir in the chopped onion, bell pepper, and minced garlic. Cook for another 3-4 minutes until the onions are translucent. Then, add the diced corned beef, salt, black pepper, and paprika. Mix well and cook until heated through and slightly crispy, about 5-7 minutes.

Eggs

    Cook the Eggs

    In a separate non-stick skillet, crack the eggs and season with salt and black pepper. Cook to your desired doneness (sunny-side up, over-easy, etc.), about 3-5 minutes.

Hashbrowns or Tater Barrels

    Prepare Hashbrowns/Tater Barrels

    In the same skillet used for the corned beef hash, add olive oil or butter. If using hashbrowns, spread evenly in the pan and cook until golden and crispy, about 5-7 minutes on each side. If using tater barrels, follow package instructions and cook until crispy.
