Prepare the Ingredients
Gather all the ingredients: flour tortillas, cheddar jack cheese, pico de gallo, salsa, sour cream, and olive oil or cooking spray.

Preheat the Pan
Heat a skillet or frying pan over medium heat. Add a small amount of olive oil or spray the pan lightly with cooking spray to prevent sticking.

Assemble the Quesadilla
Place one tortilla in the heated skillet. Sprinkle half of the cheddar jack cheese evenly over the tortilla. Top with half of the pico de gallo, then sprinkle the remaining cheddar jack cheese on top before covering with the second tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes or until the bottom tortilla is golden brown. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes until the second side is golden brown and the cheese is melted.
Serving

Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut it into wedges and serve with salsa and sour cream on the side.
