A meal in a tortilla wrap. Scrambled eggs, seasoned taco beef, cheddar jack cheese, pico de gallo and tater barrels all rolled up and served with a side of salsa & sour cream.

Preparing Taco Beef

Cook Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Season the Beef
Stir in taco seasoning and water. Bring to a simmer and reduce heat. Cook for an additional 5 minutes, stirring occasionally until the mixture thickens. Remove from heat.

Cook Eggs
In a non-stick pan, melt butter over medium-low heat. Pour the egg mixture into the pan. Stir gently with a spatula until the eggs are softly scrambled, about 3-4 minutes. Remove from heat.
Assembling the Burrito

Prepare Tater Barrels
Bake tater barrels according to package instructions until crispy and golden brown.

Fill Tortillas
Lay a tortilla flat and in the center, add a scoop of taco beef, scrambled eggs, a handful of cheddar jack cheese, a scoop of pico de gallo, and a few tater barrels.

Roll the Burrito
Fold in the sides of the tortilla and then roll from the bottom up to form a burrito. Repeat with remaining tortillas.
Serving

Serve Hot
Serve the breakfast burritos warm with salsa and sour cream on the side. Enjoy!
