Cake Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with butter or cooking spray.

    Mix Dry Ingredients

    In a large mixing bowl, sift together 1.75 cups of all-purpose flour, 2 cups of granulated sugar, 0.75 cups of unsweetened cocoa powder, 1.5 tsp of baking powder, 1.5 tsp of baking soda, and 1 tsp of salt until well combined.

    Combine Wet Ingredients

    In another bowl, whisk together 2 large eggs, 1 cup of whole milk, 0.5 cups of vegetable oil, and 2 tsp of vanilla extract until the mixture is smooth.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until combined. Carefully stir in 1 cup of boiling water until the batter is well mixed (the batter will be thin).

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

    In a mixing bowl, combine 0.5 cups of unsweetened cocoa powder, 0.5 cups of softened butter, and 3 cups of powdered sugar. Mix on low speed until combined, then add 0.25 cups of whole milk and 1 tsp of vanilla extract.

    Whip the Frosting

    Increase the mixer speed to medium and whip the frosting until it is light and fluffy. If the frosting is too thick, add a little more milk, one tablespoon at a time, until the desired consistency is reached.

    Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top and frost the top and sides of the cake.
