For the Steak

For the Gravy

Method

Preparing the Steak

  1. 1

    Tenderize the Steak

Using a meat mallet, pound the beef round steak until it is about 1/2 inch thick. This will help make the steak tender.

  2. 2

    Season the Flour

In a shallow dish, combine 1 cup of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika. Mix well.

  3. 3

    Prepare the Egg Wash

In another shallow dish, whisk together 2 large eggs and 1 cup of buttermilk until well combined.

  4. 4

    Coat the Steak

Dredge each piece of tenderized steak in the seasoned flour, then dip into the egg wash, and finally coat again in the seasoned flour. Set aside.

Frying the Steak

  1. 5

    Heat the Oil

In a large skillet, heat 1 cup of vegetable oil over medium-high heat until it shimmers.

  2. 6

    Fry the Steak

Carefully place the coated steak in the hot oil and fry for about 3-4 minutes on each side, or until golden brown. Remove the steak and drain on paper towels.

Making the Gravy

  1. 7

    Create the Roux

In the same skillet with the remaining oil (if necessary, add more to maintain about 1/4 cup), add 4 tablespoons of all-purpose flour. Whisk constantly for about 1-2 minutes until the flour is golden.

  2. 8

    Add Milk

Gradually whisk in 2 cups of milk, stirring to avoid lumps. Continue cooking until the gravy thickens, about 3-5 minutes.

  3. 9

    Season the Gravy

Add 1 teaspoon of salt and 1 teaspoon of black pepper to the gravy. Stir to combine and adjust seasoning to taste.

Serving

  1. 10

    Plate the Dish

Serve the fried steak hot, generously topped with the country-style gravy. Enjoy with mashed potatoes or your favorite side!
