Preparation

  1. 1

    Cook the Bacon

In a skillet over medium heat, add the bacon slices. Cook until crispy, about 5-7 minutes, flipping halfway through. Once cooked, remove from the skillet and place on a paper towel to drain excess grease.

  2. 2

    Scramble the Eggs

In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the olive oil and heat over medium heat. Crack the eggs into a bowl, add salt and pepper, and whisk until well combined. Pour the eggs into the skillet and stir gently with a spatula until scrambled and cooked through, about 3-4 minutes.

  3. 3

    Prepare Avocado

While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin pieces.

  4. 4

    Warm the Tortillas

In a separate skillet or directly over the flame, warm the flour tortillas for about 30 seconds on each side until they are soft and pliable.

Assembly

  1. 5

    Assemble the Burrito

On each warmed tortilla, layer half of the scrambled eggs, two slices of crispy bacon, a half cup of shredded cheddar cheese, a quarter cup of salsa, and slices of avocado.

  2. 6

    Wrap the Burrito

Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to enclose the filling securely.

  3. 7

    Serve

Cut the burrito in half if desired, and serve immediately with extra salsa on the side.
