Prepare the Bacon-Onion Jam
In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pan. Add chopped onion to the skillet and sauté until translucent. Stir in brown sugar and balsamic vinegar, cooking until caramelized. Mix in the cooked bacon, and season with salt and black pepper. Keep warm.

Form and Cook the Patties
Shape the ground beef into 4 equal patties. Season both sides with salt and black pepper. Preheat a grill or skillet over medium-high heat. Cook the patties for 3-4 minutes on one side, then flip and place a slice of aged cheddar on top. Cook for an additional 3-4 minutes, or until the cheese is melted and the burger is cooked to your desired doneness.

Assemble the Burgers
Spread dijonnaise on the bottom half of each toasted bun. Place a burger patty on top, followed by a generous spoonful of the bacon-onion jam. Top with the other half of the bun and serve immediately.
