Plantains

    Fry the Plantains

    Peel the ripe plantains and cut them into diagonal slices. Heat the cooking oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides. Remove and sprinkle with salt.

Black Beans

    Prepare Black Beans

    In a saucepan, sauté the diced onion and minced garlic until soft. Add the canned black beans (drained) and cumin. Season with salt and simmer for about 10 minutes.

Yellow Rice

    Cook Yellow Rice

    In a pot, combine the long-grain rice, turmeric, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.

Market Vegetables

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add bell peppers and zucchini. Season with salt and sauté until tender, about 5-7 minutes.

Ensalada Mixta

    Make Ensalada Mixta

    In a large bowl, combine the chopped lettuce, diced tomato, and sliced cucumber. Drizzle with olive oil and vinegar, then season with salt. Toss to combine.

Esquites

    Prepare Esquites

    In a bowl, mix the cooked corn kernels with mayonnaise, lime juice, and chili powder. Top with crumbled Cotija cheese and serve.
