Prepare the Rajas
In a skillet, heat the olive oil over medium heat. Add the sliced poblano peppers and sauté until they are soft and slightly charred, about 5-7 minutes. Season with salt to taste.

Combine Cheeses
In a mixing bowl, combine the Chihuahua cheese and cheddar cheese. Mix well.

Layer the Skillet
Once the rajas are ready, reduce the heat to low and spread the sautéed rajas evenly in the skillet. Sprinkle the cheese mixture on top of the rajas.

Bake
Transfer the skillet to a preheated oven at 400°F (200°C) and bake until the cheese is melted and bubbly, about 10-15 minutes.

Serve
Remove from the oven and let cool for a minute. Serve hot with flour tortillas or corn tortillas for a gluten-free option.
