1. Prepare the Chili Rajas
Heat olive oil in a skillet over medium heat. Add sliced onion and poblano peppers. Sauté until the vegetables are soft and slightly charred, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.
2. Assemble the Quesadillas
Place a tortilla in the skillet over medium heat. Sprinkle a generous amount of Chihuahua cheese over half of the tortilla. Add a portion of the sautéed chili rajas on top of the cheese, then fold the tortilla in half.
3. Grill the Quesadillas
Cook for about 3-4 minutes on one side until the cheese starts to melt and the tortilla is golden brown. Flip carefully and cook for another 3-4 minutes on the other side. Remove from skillet and repeat with remaining tortillas.
4. Serve
Cut the quesadillas into wedges and serve hot with salsa or guacamole if desired.
