Prepare the Chicken
Preheat the oven to 300°F (150°C). Rinse the whole chicken and pat it dry with paper towels. Rub the chicken all over with olive oil, salt, black pepper, garlic powder, and onion powder.

Make the Adobo Sauce
In a blender, combine the dried chipotle peppers, tomato sauce, white vinegar, garlic cloves, cumin, oregano, sugar, salt, and black pepper. Blend until smooth.

Roast the Chicken
Place the seasoned chicken in a roasting pan. Pour the adobo sauce over the chicken, making sure it gets into the cavity and under the skin. Cover the pan with aluminum foil and roast in the preheated oven for 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Finish and Serve
Remove the foil for the last 30 minutes of cooking to allow the skin to crisp up. Once done, let the chicken rest for about 10 minutes before carving and serving. Enjoy your slow roasted chicken in adobo!
