Directions
- 1
Prepare the Refried Beans
In a saucepan, heat the refried beans over medium heat until warmed through. Stir occasionally to prevent sticking.
- 2
Fry the Eggs
In a non-stick skillet, heat the cooking oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
- 3
Assemble the Tostadas
On each tostada, spread a layer of warmed refried beans. Top with one sunny-side-up egg.
- 4
Add Salsa and Toppings
Drizzle salsa roja over two of the tostadas and salsa verde over the other two. Sprinkle with cotija cheese, and add a dollop of sour cream and guacamole on the side. Finally, garnish with pico de gallo.
- 5
Serve
Serve immediately while the eggs are warm. Enjoy your Huevos Rancheros Divorciados!
