    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.

    Add Refried Beans

    Stir in the refried beans and season with salt and pepper. Mix well and cook for about 5 minutes until heated through.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, spread some of the bean mixture and a sprinkle of Chihuahua cheese in the center, then roll it up tightly. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Place the rolled enchiladas in a baking dish, seam side down. Pour the enchilada sauce over the top and sprinkle with remaining Chihuahua cheese.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Prepare Yellow Rice

    While the enchiladas are baking, prepare the yellow rice according to package instructions.

    Serve

    Once baked, remove the enchiladas from the oven, garnish with chopped cilantro, and serve with yellow rice on the side.
