Preparation Directions
1. Grill the Corn
Preheat your grill to medium-high heat. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally until the corn is charred and cooked through.
2. Prepare the Chipotle Aioli
In a bowl, combine mayonnaise, minced chipotle peppers in adobo sauce, garlic, lime juice, salt, and pepper. Mix well and set aside.
3. Assemble the Elotes/Esquites
Once the corn is grilled, remove it from the grill and let it cool slightly. If making esquites, cut the kernels off the cob and place them in a serving bowl. If making elotes, leave the corn on the cob.
4. Add Toppings
Drizzle the chipotle aioli over the corn or corn kernels. Sprinkle with cotija cheese and Rocco’s spice blend. Garnish with fresh cilantro.
5. Serve
Serve with lime wedges on the side for squeezing over the top.
