Preparing the Burrito

    Cook the Dorado

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add the dorado fillets, cumin, paprika, salt, and black pepper. Cook for about 3-4 minutes per side until the fish is cooked through and flakes easily with a fork.

    Prepare the Filling

    Once the fish is cooked, remove it from the skillet and flake it with a fork. In a bowl, combine the flaked fish, cooked rice, black beans, cheese, and lime juice. Mix well.

    Assemble the Burritos

    Warm the tortillas in a dry skillet for about 30 seconds on each side. Place a generous portion of the filling onto each tortilla and roll them tightly to form burritos.

    Griddle the Burritos

    Place the burritos seam side down on the skillet and cook for about 2-3 minutes per side until golden brown and crispy.

Making the Salsa Verde

    Blend the Salsa Verde

    In a blender or food processor, combine tomatillos, cilantro, jalapeño, minced garlic, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.
