    Prepare the Marinade

    In a bowl, mix the achiote paste, orange juice, lime juice, minced garlic, oregano, cumin, salt, and black pepper until well combined.

    Marinate the Pork

    Place the pork shoulder in a large resealable plastic bag or a dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Prepare for Roasting

    In a roasting pan, place the marinated pork shoulder and add bay leaves and water. Cover the pan tightly with aluminum foil.

    Roast the Pork

    Place the roasting pan in the preheated oven and roast for about 4 to 5 hours, or until the pork is tender and easily shreds with a fork.

    Finish and Serve

    Remove the pork from the oven, let it rest for 15 minutes, then shred the meat using two forks. Serve with warm tortillas, pickled red onions, and your favorite salsa.
