Prepare the Meatball Mixture
In a large bowl, combine Mexican chorizo, ground beef, breadcrumbs, minced garlic, egg, chopped cilantro, salt, and black pepper. Mix until well combined.

Form the Meatballs
Using your hands, form the mixture into 1-inch meatballs and place them on a baking sheet.

Bake the Meatballs
Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes or until fully cooked.

Prepare the Rojo Sauce
In a saucepan, combine your favorite rojo sauce and bring to a simmer. Add the cooked meatballs to the sauce and let them simmer for an additional 5 minutes.

Serve the meatballs topped with aged cotija cheese, a squeeze of lime, and a drizzle of crema.
