Preparation and Cooking

    Marinate the Meats

    In a mixing bowl, combine olive oil, lime juice, minced garlic, tequila, salt, and black pepper. Add the flank steak and chicken breast to the marinade, ensuring they are well-coated. Let them marinate for at least 1 hour, or overnight for deeper flavor.

    Prepare the Chorizo

    Slice the chorizo into thick rounds. Set aside for grilling.

    Grill the Meats

    Preheat the grill to medium-high heat. Grill the marinated flank steak and chicken until cooked to your desired doneness, about 7-10 minutes per side for the steak and 5-7 minutes per side for the chicken. Add the chorizo to the grill and cook for about 3-4 minutes on each side until browned.

    Sauté the Chili Rajas

    In a skillet over medium heat, add a little olive oil and sauté the sliced chili peppers until softened, about 5 minutes. Season with salt to taste.

    Serve

    Slice the grilled steak, chicken, and arrange on a platter. Top with sautéed chili rajas and serve with salsa roja on the side.
