    Prepare the Pickled Red Onions

    Thinly slice the red onion and place it in a bowl. Pour the white vinegar over the onions and let them sit for at least 30 minutes to pickle.

    Cook the Yellow Rice

    In a pot, combine 2 cups of yellow rice with 4 cups of water. Add salt to taste. Bring to a boil, then reduce to low heat, cover, and simmer for about 20 minutes or until the rice is cooked and the water is absorbed.

    Prepare the Black Beans

    If using canned black beans, rinse and drain them. If using dried beans, soak them overnight and cook until tender. Season with salt and pepper to taste.

    Fry the Plantains

    Peel the plantains and slice them diagonally. Heat olive oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Make the Chimichurri

    In a food processor, combine fresh parsley, cilantro, garlic cloves, olive oil, red pepper flakes, salt, and black pepper. Blend until smooth. Adjust seasoning as needed.

    Assemble the Dish

    On a serving plate, place a scoop of yellow rice, a serving of black beans, fried plantains, and top with pickled red onions. Drizzle chimichurri over the top.
