Preparation and Assembly

    Cook the Potatoes

    Place the new potatoes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until tender. Drain and let cool slightly before slicing in half.

    Boil the Eggs

    In a small pot, gently place the eggs and cover with water. Bring to a boil, then reduce the heat and simmer for 9-10 minutes for hard-boiled eggs. Remove from heat, cool in cold water, peel, and set aside.

    Blanch the Haricot Verts

    Bring a pot of salted water to a boil. Add the haricot verts and cook for 2-3 minutes until bright green and tender-crisp. Drain and transfer to an ice bath to stop the cooking. Drain again and set aside.

    Sear the Tuna

    Heat a skillet over high heat and add a drizzle of oil. Season the tuna steaks with salt and pepper. Sear each side for about 1-2 minutes for rare. Remove from skillet and slice thinly.

    Assemble the Salad

    On a large serving platter, arrange the mixed greens, sliced potatoes, halved cherry tomatoes, blanched haricot verts, and sliced tuna. Quarter the hard-boiled eggs and place on top.

    Drizzle with Vinaigrette

    Drizzle sesame vinaigrette over the salad just before serving. Adjust seasoning if necessary.
