Preparing the Blackened Mahi-mahi

Season the Fish
Pat the mahi-mahi fillets dry with a paper towel. Season both sides with Cajun seasoning, salt, and black pepper.

Cook the Rice
Add rice and Cajun seasoning, stirring to coat. Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.

Fluff the rice with a fork and stir in chopped green onions before serving.

In a bowl, combine diced pineapple, orange segments, lime juice, chopped mint leaves, and honey. Toss gently to mix.
