Marinated Portobello Mushrooms

Method

Preparation Steps

  1. 1

    Marinate the Mushrooms

In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper. Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

While the mushrooms are marinating, chop the red bell pepper, poblano pepper, and spinach. Set aside.

  3. 3

    Grill the Mushrooms

Preheat a grill or grill pan over medium heat. Remove the mushrooms from the marinade and grill for about 5-7 minutes on each side until tender and slightly charred.

  4. 4

    Sauté the Vegetables

In a skillet, add a drizzle of olive oil and sauté the red bell pepper and poblano pepper for 3-4 minutes. Add the chopped spinach and cook until wilted.

  5. 5

    Assemble the Dish

Place the grilled Portobello mushrooms on a serving platter. Top each mushroom cap with the sautéed vegetable mixture and sprinkle with crumbled feta cheese.

  6. 6

    Serve

Serve warm as a delightful appetizer or main dish.
