Marinate the Mushrooms
In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and black pepper. Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Prepare the Vegetables
While the mushrooms are marinating, chop the red bell pepper, poblano pepper, and spinach. Set aside.

Sauté the Vegetables
In a skillet, add a drizzle of olive oil and sauté the red bell pepper and poblano pepper for 3-4 minutes. Add the chopped spinach and cook until wilted.

Assemble the Dish
Place the grilled Portobello mushrooms on a serving platter. Top each mushroom cap with the sautéed vegetable mixture and sprinkle with crumbled feta cheese.
