Fondue Preparation

Prepare the Cheese Mixture
In a bowl, combine the Gruyère and Emmental cheeses with cornstarch. This will help thicken the fondue.

Heat the Wine
In a fondue pot or saucepan, heat the white wine over medium heat until it is warm but not boiling.

Add Garlic and Cheese
Add minced garlic to the warm wine and stir for 1 minute. Gradually add the cheese mixture, stirring constantly until melted and smooth.

Season the Fondue
Stir in lemon juice, nutmeg, and black pepper to taste. Keep the fondue warm on low heat.

Serve the Fondue
Arrange the grilled Andouille, crispy Brussels sprouts, soft pretzels, apple slices, and jalapeño toast around the fondue pot. Use forks to dip the items into the melted cheese.
