    Prepare the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the pan and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces and set aside.

    Cook the Green Peas

    In a small saucepan, bring water to a boil and add the green peas. Cook for 3-5 minutes until tender. Drain and transfer the peas to a blender.

    Make the Mint and Pea Puree

    To the blender with the peas, add the fresh mint leaves, heavy cream, salt, and black pepper. Blend until smooth. If the puree is too thick, you can add a bit more cream or water to reach your desired consistency.

    Sear the Scallops

    Pat the scallops dry with paper towels and season with salt and pepper. In the same skillet used for the bacon, heat the olive oil over medium-high heat. Once hot, add the scallops and sear for about 2-3 minutes on each side until they are golden brown and have a slight crust.

    Assemble the Dish

    On a plate, spread a generous amount of the mint and green pea puree. Place the seared scallops on top, and then sprinkle the crumbled bacon over the scallops for added flavor and crunch.
