Method
Preparing the Prime Rib
Season the Roast
Preheat your oven to 450°F (232°C). Pat the prime rib roast dry with paper towels. In a small bowl, mix together kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the olive oil all over the roast, then generously apply the seasoning mixture to the entire surface of the meat.
Roast the Prime Rib
Place the seasoned roast in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes, then reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, approximately 1.5 to 2 hours. Use a meat thermometer to ensure accuracy.
Rest the Roast
Once cooked, remove the roast from the oven and let it rest for at least 20 minutes before slicing. This helps the juices redistribute.
Making the Horseradish Sauce
Combine Ingredients
In a medium bowl, mix the prepared horseradish, sour cream, lemon juice, and salt until well combined. Adjust the seasoning to taste and refrigerate until serving.

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning as needed.
