Prepare the Tart Crust
In a mixing bowl, combine the flour, sugar, and salt.

Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Be careful not to overwork the dough.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Peel, core, and slice the apples thinly.

In a large bowl, mix the sliced apples with brown sugar, cinnamon, lemon juice, and vanilla extract. Allow the mixture to sit for about 15 minutes to let the flavors meld.

Assemble the Tart
Preheat the oven to 375°F (190°C).

Roll out the chilled dough on a floured surface to fit your tart pan. Transfer the dough to the pan and trim the edges.

In a medium saucepan over medium heat, combine the granulated sugar and cook until it melts and turns a golden brown color.

Once melted, carefully whisk in the butter until it is fully melted and combined.

Slowly pour in the heavy cream while whisking continuously. Be cautious as the mixture may bubble up. Stir in the salt and remove from heat.
