Method

Roasted Salmon

    Prepare the Oven

    Preheat your oven to 400°F (200°C).

    Season the Salmon

    Rub the salmon fillets with olive oil, salt, and black pepper. Place them skin-side down on a baking sheet lined with parchment paper.

    Add Lemon

    Slice the lemon in half and squeeze the juice over the salmon. Place the lemon halves on the baking sheet.

    Roast the Salmon

    Roast in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Confit Tomato

    Prepare Tomatoes

    Preheat your oven to 275°F (135°C).

    Combine Ingredients

    In a baking dish, combine cherry tomatoes, whole garlic cloves, fresh thyme, and olive oil. Toss gently to coat.

    Bake the Tomatoes

    Bake in the oven for 2-3 hours, until the tomatoes are soft and bursting with flavor.

Pesto Mashed Potatoes

    Prepare Potatoes

    Peel and chop the potatoes into even-sized chunks.

    Boil the Potatoes

    Place the potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, until tender.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, pesto, salt, and black pepper. Mash until smooth and creamy.

Leek Fondue

    Prepare Leeks

    Clean the leeks thoroughly, removing any dirt, and slice them thinly.

    Sauté Leeks

    In a pan, melt butter over medium heat. Add sliced leeks and sauté for 10-12 minutes until softened.

    Pour in the heavy cream, season with salt and black pepper, and cook for an additional 5 minutes until thickened.
